I am often asked 'What should I buy?'
The very best camera is always the one in your hand!
In saying that if you are considering starting out or up-grading there are a few things to think about.
Camera: Always buy the very best you can afford. So much money is wasted by having to up-grade because your camera isn't capable of doing what you need it to. I've moved to mirrorless .... and I will never go back!
Lenses: Think carefully about the type of photography you want to do. If you want to shoot landscapes then go wide. A 16-35mm or an ultra-wide 14-24mm is ideal. However, if Macro is your thing then a prime lens would be more suitable.
Filters: These are essential for long exposures. To start, I suggest a polarizer, 0.9 graduated ND and a 6 stop. Remember you will need an adapter and holder. It is much more affordable to buy a starter kit than everything individually if you can.
Bag: Make sure it will fit everything you need to take with you, with room to spare for extras like food and warm clothing. My bag is specially designed for a women's smaller frame. So comfortable!
Tripod: Yes... you need one. Although mirrorless cameras are now capable of creating sharp but short long exposures using a tripod will give you much more flexibility. Make sure it is stable enough that it will hold the weight of your camera, heaviest lens and filters. I like minimal levers for adjusting the camera but you may need to think about this for things like panning. I also like clips for extending the legs. It is a preference but I think it's much faster and since I always seem to be racing to sunset I find this useful.
Weight: If you are going to be hiking then consider what it all adds up to. It never feels too bad when you first lift it but try lugging it up a mountain all day!
